Taqueria Gabriel

Located in the financial district, Tacos El Vilsito serves up some of the city’s best tacos al carbon: grilled tortillas, such as soft corn or flour (the latter with the option to have it “volcaned,” which means that it has been cooked so long that the tortilla is ashy) topped with a small mountain of meat, including adobada and suckling pig, plus cilantro salsa. The restaurant’s fried corn milanesa is also quite good, but the real showstopper is the suadero: a massive mess of thick strips of ham and cheese melted together on two corn tortillas.

The tacos here aren’t cheap, but they are incredibly tasty. The lines are long but move fast, and the staff is friendly. Be sure to try the cochinita pibil, slow-roasted pulled pork in achiote paste and citrus juices.
